Well, thankfully, there is light at the end of the tunnel, and the end of the tunnel is closer than it has been in a long long while.
Here on the Afternoon Show we are connecting with those bars and restaurants to remind ourselves of the amazing places we have in the kingdom with a new feature called “Restaurant at Home”.
This is where we talk to a chef or owner of a bar or restaurant somewhere in Kerry and they give us an item from their menu which we will then try to recreate at home.
For our first ever edition, we have Rose Spillane from Spillanes Seafood Bar & restaurant in the Maharees, who described the surroundings of her business…

Here's Brendans effort at home. All in all, it took about 20 minutes (Although with a bit more practise, 10 minutes).
Beautiful, fresh flavours from the salad that go so perfectly with the salt and pepper kalamari. I can't imagaine how nice this would be in Spillanes while taking in the sunset.
