A group of enterprising farmers in mid-Kerry are looking forward to their first harvest of snails.
Kerry Escargot is the brainchild of Lithuanian’s Tomas and Marius, who are renting the land from Vincent Scott in Rusheen East, since June 2016.
The snails, which are living in three different types of enclosures on the former dairy farm, are destined for dinner plates across Europe.
Their first harvest will yield six tonnes of snails; but the farmers have ambitions to grow production and try and convince Irish restaurants to include them on their menu.
